Ingredients

  • Tomatillos
  • White Onion
  • Jalapenos
  • Garlic
  • Avocado oil
  • Cilantro
  • Lime Juice
  • Salt and Pepper

Making the Salsa

Making this salsa couldn’t be easier! Simply roast the vegetables until they’re soft and slightly charred, then blend them together with fresh cilantro and lime juice for an extra punch of flavor. The result? A bold and zesty salsa verde you’ll absolutely love!

  1. Start by preheating your oven to 400℉. While that is preheating, get started on preparing your vegetables. Cut the tomatillos, onions and jalapeños into large chunks and peel the garlic cloves.
  2. In a large mixing bowl, combine the tomatillos, onions, jalapeños, and garlic. Drizzle with oil, season with salt and pepper, and toss until everything is evenly coated. Spread the vegetables in a single layer on a baking sheet.
  3. Roast the vegetables in the oven for 30-35 minutes, tossing halfway through cooking.
  4. In a food processor or blender, blend the vegetables with cilantro, lime juice and more salt and pulse until a smooth consistency is reached.

This salsa is incredibly versatile and pairs well with a variety of dishes. Serve it as a zesty dip with tortilla chips, or drizzle it over tacos, burritos, and enchiladas for an extra burst of flavor. It makes a perfect dipping sauce for my Quick and Delicious Steak Quesadillas, adding a bright and tangy contrast to the rich, melty cheese.
