Ingredients
  

  • 6-8 tomatillos
  • 1 large white onion
  • 1-3 jalapenos depending on desired spice level
  • 6 cloves garlic
  • 2 tbsp avocado oil
  • salt and pepper to taste
  • juice of 1 lime
  • cup fresh cilantro

Instructions
 

  • Preheat the oven to 400℉. Meanwhile, prepare your ingredients. Chop the tomatillos, onions and jalapenos into large 1-inch chucks. and peel the garlic cloves.
  • In a large mixing bowl, combine the tomatillos, onions, jalapeños, and garlic. Drizzle with oil, season with salt and pepper, and toss until everything is evenly coated. Spread the vegetables in a single layer on a baking sheet.
  • Roast the vegetable in the oven for 30-35 minutes, tossing half way through cooking time.
  • In a food processor, combine the roasted vegetables, cilantro, lime juice and more salt and pulse until a smooth consistency is reached.
  • Enjoy this salsa with tortilla chips or with your favorite tacos, quesadillas or burritos!
