This Roasted Tomatillo Salsa Verde is fresh, zesty, and full of flavor! Made with roasted tomatillos, garlic, onions, and jalapenos, it's the perfect dip for chips or topping for tacos, quesadillas, and more.
Preheat the oven to 400℉. Meanwhile, prepare your ingredients. Chop the tomatillos, onions and jalapenos into large 1-inch chucks. and peel the garlic cloves.
In a large mixing bowl, combine the tomatillos, onions, jalapeños, and garlic. Drizzle with oil, season with salt and pepper, and toss until everything is evenly coated. Spread the vegetables in a single layer on a baking sheet.
Roast the vegetable in the oven for 30-35 minutes, tossing half way through cooking time.
In a food processor, combine the roasted vegetables, cilantro, lime juice and more salt and pulse until a smooth consistency is reached.
