These Spicy Pickled Cucumbers are packed with bold flavors, thanks to the heat from chili oil and the tang from rice vinegar. I love adding these to rice bowls, lettuce wraps or just on their own as a satisfying snack! They’re the perfect way to add a refreshing crunch and a spicy kick to any dish. Easy to prepare and versatile, these cucumbers are a must-have for spicing up your meals or enjoying on their own!

Ingredients for Spicy Pickled Cucumbers

Cucumbers: Use any cucumbers you love for this recipe! No need to peel—just give them a good wash. Slice them to your preferred thickness for the perfect crunch in every bite.

Spicy Marinade: Rice Vinegar, coconut aminos, sugar, salt and chili oil. That’s it! Add as little or as much chili oil for your preferred level of spiciness. I like adding 2 tsp!

Making the Spicy Pickled Cucumbers

  1. Wash and dry your cucumbers and slice thinly.
  2. Combine all the ingredients in a jar or an airtight container with a lid. Add the cucumbers and shake to fully coat the cucumbers in the marinade.
  3. Pop in the fridge for at least 15 minutes or ideally 2-4 hours for best results!

To Serve

I love adding these Spicy Pickled Cucumbers to rice bowls or lettuce wraps for an extra kick of heat and crunch. But honestly, they’re so good, I often find myself snacking on them straight from the fridge!

Ingredients
  

  • 2 cups cucumbers thinly sliced
  • ¼ cup rice vinegar
  • 1 tbsp coconut aminos
  • ¼ tsp salt
  • 1 tsp sugar
  • 1-2 tsp chili oil

Instructions
 

  • First, wash and dry your cucumbers. Slice the cucumbers thinly.
  • In a jar, combine rice vinegar, coconut aminos, sugar, salt and chili oil.
  • Add the sliced cucumber to the jar, cover and shake so the cucumbers are completely coated with the marinade.
  • Place the cucumbers in the fridge for 15 minutes or ideally 2-4 hours.

Notes

  • No need to peel the cucumbers—just give them a good wash!
  • While they can be ready in as little as 15 minutes in the fridge, for the best flavor, let them marinate for 2-4 hours to achieve that perfect pickled bite.
  • Store in the fridge for up to 72 hours.
