Ingredients for Spicy Pickled Cucumbers
Cucumbers: Use any cucumbers you love for this recipe! No need to peel—just give them a good wash. Slice them to your preferred thickness for the perfect crunch in every bite.
Spicy Marinade: Rice Vinegar, coconut aminos, sugar, salt and chili oil. That’s it! Add as little or as much chili oil for your preferred level of spiciness. I like adding 2 tsp!
Making the Spicy Pickled Cucumbers
- Wash and dry your cucumbers and slice thinly.
- Combine all the ingredients in a jar or an airtight container with a lid. Add the cucumbers and shake to fully coat the cucumbers in the marinade.
- Pop in the fridge for at least 15 minutes or ideally 2-4 hours for best results!
To Serve

Ingredients
- 2 cups cucumbers thinly sliced
- ¼ cup rice vinegar
- 1 tbsp coconut aminos
- ¼ tsp salt
- 1 tsp sugar
- 1-2 tsp chili oil
Instructions
- First, wash and dry your cucumbers. Slice the cucumbers thinly.
- In a jar, combine rice vinegar, coconut aminos, sugar, salt and chili oil.
- Add the sliced cucumber to the jar, cover and shake so the cucumbers are completely coated with the marinade.
- Place the cucumbers in the fridge for 15 minutes or ideally 2-4 hours.
