The Grilled Korean BBQ Chicken
The star of the show! This grilled Korean BBQ chicken is incredibly easy to make and turns out perfectly juicy every time. All you need is a handful of ingredients to marinate the chicken thighs for 30 minutes or up to overnight (I prefer to marinate overnight for maximum flavor). Short on time? No problem! You can even skip a long marinating session and still get delicious results in a flash.
- Boneless, skinless chicken thighs
- Yellow onion
- Garlic
- Gochujang paste
- Coconut aminos (or soy sauce)
- Honey
- Oyster Sauce
To start, simply add all of the marinade ingredients to a food processor or blender and blend until smooth. Pour the marinade over the chicken thighs and refrigerate to let marinade. When ready to grill the chicken, preheat the grill to 350℉. Don’t forget to lightly oil the grill grates to prevent the chicken from sticking. Sear the chicken thighs on each side for 7-8 minutes or until chicken is cooked through and has a nice char. I like to baste the chicken with the leftover marinade while grilling for extra flavor!

Building the Lettuce Wraps
Toppings: Lettuce of choice (romaine, butter lettuce and green leaf lettuce work great!), avocado, white rice and a drizzle of spicy gochujang sauce. That’s it! Feel free to customize your lettuce wraps’ toppings to your preference.
Spicy Gochujang Sauce: Simply whisk together gochujang paste, coconut aminos, honey and oyster sauce.
Assemble: To build your lettuce wraps, layer the lettuce with white rice, sliced Korean BBQ chicken, avocado and a generous drizzle of that spicy gochujang sauce. Yum!

- 2 tbsp honey
- 2 tbsp oyster sauce
- ½ medium yellow onion

Instructions
Grilled Korean BBQ Chicken
- In a food processor or blender, combine all the marinade ingredients and blend until smooth. Pour the marinade over the chicken thighs in a large bowl or zip-top bag, making sure they’re well coated. Cover and marinate in the refrigerator for at least 30 minutes, or up to overnight for maximum flavor.
- Preheat your grill to 350℉ and lightly oil the grill grates to prevent sticking. Place the marinated chicken thighs on the grill and cook for 7–8 minutes per side, or until the chicken is cooked through and has a nice char. For extra flavor, baste the chicken with any remaining marinade while it grills.

- In a mixing bowl, whisk together the gochujang, coconut aminos, honey, and oyster sauce until smooth and well combined. Set aside until ready to drizzle over the lettuce wraps.
