Ingredients
  

  • 4 cups lettuce green leaf lettuce or romaine
  • ½ cup red onion thinly sliced
  • ¼ cup freshly grated parmesan plus more for topping

Lemon Dijon Dressing

  • 1 tbsp extra virgin olive oil
  • 2 tsp grainy Dijon mustard
  • 1 tbsp maple syrup
  • juice of ½ a lemon
  • ¼ tsp red pepper flakes
  • ¼ tsp salt
  • ¼ tsp black pepper

Instructions
 

  • Thinly slice the red onion and roughly chop the lettuce. In a large mixing bowl, whisk together the lemon Dijon dressing ingredients, then add the red onion slices and let sit for 5–10 minutes to slightly pickle - this helps mellow their flavor and adds a delicious tang.. Add the chopped lettuce and freshly grated Parmesan, then toss until everything is well coated. Top with extra Parmesan and serve immediately.
